Tidal Rum
What actually is Rum?
One of the oldest spirits in the world, with an adventurous history to match, rum is made from sugar cane, brought to the Caribbean by Columbus in 1493. Nobody’s really sure where the name came from, although we prefer to believe it originates from rumbullion, meaning ‘a great tumult or uproar’. It’s where we get the word rumbustious ‘hell-raising, boisterous, rowdy’ and its more modern equivalent rambunctious. Rum is made from sugar cane, processed into molasses and then distilled in pot or column stills and aged in warm climates to create the wonderfully complex spirit we all love.
How is Tidal Rum made?
We like to call Tidal Rum an island hopper, a craft blend of four golden Caribbean rums all chosen for their depth and complexity, and infused with Pepper Dulse, foraged from Jersey’s island shores. Copper pot stills give our rum a tremendous marine flavour to enhance the seaweed infusion, and the golden salted caramel colour comes from the two-three year oak barrel aging process. Why age rums? It adds the depth of character and flavour that we’re looking for in our balanced and complex Tidal blend.
Is Rum sugar-free?
Lots of people ask this - and the surprising answer is yes. Although rum’s made from sugar cane, no actual sugar can make it through the distilling process. Some brands may add sugar, sweeteners and flavouring, but we don’t. Tidal’s unique flavour comes from the oak-aging of the spirit and a natural infusion of foraged wild seaweed, nothing else. And just in case you missed that, we’ll say it again. Zero sugar in our Tidal Rum. And if that’s not the best news you’ve heard all day, we don’t know what is.
What is Pepper Dulse?
Pepper Dulse will change everything you’ve ever thought about seaweed. This rare and highly prized sea herb is known as ‘the truffle of the sea’ for its incredibly fresh, moreish, peppery umami flavour. It grows best in clean waters, like the giant tidal gyre that surrounds and feeds the island of Jersey, where our Pepper Dulse is foraged in season. One of the largest tidal ranges in the world almost doubles Jersey’s size twice a day and creates a ‘lunarscape’ of exposed seabed and rockpools. Foraging for the ‘truffle of the sea’ in this otherworldly landscape on a full moon spring tide is always an adventure, trimming rather than picking to ensure this exquisite and rare botanical continues to thrive.
Where’s best to drink Tidal?
Inside, outside - Tidal’s best on the rocks. Rum’s one of those wonderful shape shifting spirits that has a different appeal in every season, so mix it up. Serve as a refreshing Tidal long drink at summer barbecues or beach picnics. Or cosy up in front of a winter log fire or campfire with your favourite partner in crime and a Tidal poisoned hot chocolate and enjoy some True Rumance. Like most things in life, Tidal Rum is always better shared.

The art of crafting a really good Tidal starts with the ice. Fill up a glass - ice always gives rum an edge - and add a double measure of Tidal Rum, soda water, and the juice of half a fresh lime. Take a sip and enjoy the journey.
